My Favorite Tilapia

 Here's something I made the other night for dinner.  
I figured I would put it up here so I don't forget how 
awesome it was.  
It's Tilapia with an almond/lemon pepper/dill crust
along side roasted veggies with fresh garden tomatoes,
basil and a balsamic glaze.

I'm getting hungry just looking at it.

It's so easy, you should make it.

Preheat the oven to 375 degrees.

Take the almonds, lemon pepper, dill & toss them
in a little food processor, pulse until it looks like thick powder.

Line a cookie sheet with foil, spray with a little olive oil.
(this is just for easy clean up)
Spray 2 Tilapia filets lightly with olive olive oil &
place on the foil.  Sprinkle generously with almond
mixture, pressing it on until coated, then flip
over and do the same to the other side.

Surround the fish with all your cut up veggies,
give the whole pan a light spray of olive oil then
season with whatever you would like.
My favorite seasoning is Trader Joe's 21 Season
Salute, or Mrs. Dash, preferable something with no
sodium, the fish should be plenty salty from the
lemon pepper. 

Next drizzle a little Balsamic Glaze over the top of
the veggies.  If you don't have this you could try
lemon juice or just leave them dry.

Bake in the oven, uncovered about 10-15min
or fish flakes easily with a fork.

Plate all the food, top veggies with fresh
garden tomatoes, a some basil & a little
more balsamic glaze.

2 Tilapia Filets
(I used frozen & thawed them under running water)
1/4 c. Almonds
1.5 tsp Lemon Pepper
1 tsp Dill
1 Onion cut into big round thick slices
5 Baby Portobello Mushrooms, sliced in half
1 Squash cut into thick round slices
(You can use any veggies you would like)
1 Tomato
6 Basil Leaves
Olive Oil
Fresh Ground Pepper
